Check Muddy Buddies

This is one of my family’s favorite snacks! I’ve tried making it with less fat or sugar so I could enjoy it more but its not the same! So save it for those special times and enjoy it!

Ingredients

9 cups Rice Chex®, Corn Chex® or Chocolate Chex® cereal (or combination- I like the majority to be corn as they hold up better)
1 cup semisweet chocolate chips (find Dairy and GF brand)
1/2 cup peanut butter
1/4 cup dairy free butter (earth balance) I have used coconut oil- just reduce as it makes it more soggy.
1 teaspoon vanilla
1 1/2 cups powdered sugar

I found using an extra large cake pan works great for mixing it all in, but find something large you have room to stir it thoroughly in!

1. Measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated.
3. Add powdered sugar. If you have a large pan you can sprinkle sugar over and stir it up or use a large paper bag or 2-gallon resealable food-storage plastic bag. I have even used a trash bag (clean of course!) in a pinch which actually works great! Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

You can add different things in to your mix to make it your own! I love GF pretzles and dried cranberries.

Birthday Party for kids ….GF and Dairy Free ?….. No problem!

My oldest Keao turned 9 this past Monday. Her Birthday Party was over the weekend and she had requested cup cakes and “Muddy buddies” for her party food. I had to make sure they were Dairy and GF but yummy for all her friends to enjoy.

I love King Arthur GF Mixes! Not only do they taste great but they don’t scam you and only give you enough to make a 1/2 of a cake! I used Coconut oil in the cake and it added a nice flavor as well as making it extra moist!

I used the Cherry Brook Frosting mix as I had used it before when we first went GF. But I am going to tell you to save your money and just use a basic recipe for regular butter cream frosting, because its just over priced powder sugar and coco powder in a box. I could of kicked myself for spending that much money on it after I got home and looked at the ingredients! I usually never put anything in my cart with out checking it first, but because I had used it before I just tossed it in. For the basic butter cream recipe substitute any milk with almond milk and any butter with non-dairy butter like “Earth Balance”.

Instead of Ice Cream I found Edy’s Outshine all fruit Popsicle at Costco! Talk about a hit at a pool party… and no one missed the ice cream!

Italian Jambalaya

This was so yummy! My family and I scarfed it down but there was enough for a second meal… and some left to take a photo of it!

We had been running around and time got away from us, eating out was really tempting but we headed home to eat. A quick meal was needed as we were all hungry! I had some left over veggies in the fridge from the night before, some frozen rice/quinoa cups I had frozen on a prep day, and the sausages I found at Costco just sounded yummy!

I used a can of tomatoes to tie it all together. When I cooked the sausages up I added some sun dried tomatoes and roasted garlic I had on hand too. I tossed in a can of olives a few mins before I turned of the heat. Mix every thing together in large bowl and serve.

Smoothie Time!

Oh man is it getting hot in Charleston! People keep telling us- “Just wait till July!” Uh oh! I think were will be in trouble, as we are not used to any humidity in Hawaii!
So smoothies will just have to get us through! Not a bad idea in my book!

My newest inspired smoothie is from my kids favorite drink- Chocolate Almond Milk.
I added some (2) frozen bananas I had saved before they got too brown. You can use fresh as well- the fresh one in the photo was just a prop as I forgot to take a befor photo of my ingredients! Add a big scoop of PB, 1.5 Cups of milk and ice. I have a Ninja Blender and love it! It handles ice and frozen fruits like a champ and it doesn’t break the bank!

Mango Bread Pudding (Dairy and Gluten Free)

I have never been a fan of bread pudding- especially with soggy raisins in it, but I hate throwing away the two end hunks of expensive GF bread I buy! So I have been saving them in my freezer and figured I would try and make my own- with no raisins! lol! I knew I would have to use coconut milk in place of the milk or cream that usually goes into a bread pudding and the 2 mangoes I received in my Organic Box deliver the day before seamed like the perfect paring!

I cut the bread up into cubs, and filled up a 9×11 glass baking dish. I coated it in Coconut oil first. Slice up 2 mangoes and mix in with the bread.
Then is a separate bowl, mix:
2 cans of coconut milk,
4 eggs,
1 Tsp of coconut extract,
1 TBS of Cinnamon,
1 Tsp of Coriander,
1/4 cup of coconut sugar,
1 cup of coconut flakes

Poor over bread and let soak 10 mins. Bake at 350 for 45-60 mins. The last ten mins of baking add some more coconut to the top to brown.

Serve warm. If you would like “whipped Cream” make it using coconut milk! Keep one can in the fridge to chill, take out and whip it up!

Coconut whipped cream recipe

1 can full-fat coconut milk
1 teaspoon pure vanilla extract
3 tablespoons powdered sugar (organic)
Mixer

Directions:

Place the unopened can of coconut milk in the refrigerator overnight.
Open the can- DO NOT shake it! Take the think top layer off and put it into a mixing bowl. Add the vanilla and the powdered sugar and beat on high until the mixture is fluffy
and frothy just like real whipped cream.
